CBD Edibles: Pumpkin Muffin Recipe
Consuming CBD edibles is a great way to slow the digestion processing of your dosage of CBD. A CBD edible consists of mixing your CBD oil with a food product. In this blog, it will be a fabulous tasting pumpkin muffin. If you take the oil without a food product, your body may absorb the CBD faster to gain a quick reaction, but the benefits generally lessen or end about five hours after consuming the oil. Consuming the same oil with a food product can slow the processing down to extend the effects an extra hour or two. Some people are not keen on the taste of CBD oils and still want the benefits of the oils. This is a great way to take them.
The recipe I am sharing is one that I modified from CleanFoodCrush.com. They have great recipes but did not meet my requirements of being gluten-free and egg-free. I hope you don't stop reading because of those two things, these still taste great. You can always substitute the flour and eggs where I use an alternative. The original recipe did not work as well as I hoped when I started, so I started tweaking the recipe. I have made these muffins five times over the last five weeks. The recipe is very simple and takes about 35 minutes from start to finish.
Recipe
Ingredients:
12 doses of your favorite CBD oil ( links to our two oils by clicking on the photos)
2 c. Old Fashioned Oats
4 scoops of protein powder
1- 15oz can of pumpkin puree (typically found in the pie aisle at the grocery store)
1 c. of unsweetened coconut milk (may substitute almond milk or regular milk)
1/2 c. of Monk Fruit in the Raw
1/2 c. Gluten-free flour
1/2 c. of Just Egg ( may replace with real eggs or another alternative)
1 1/2 tbsp. baking powder
1/2 tsp. cinnamon
1 bag (10 oz) of cacao chips ( I love the Ghirardelli 60% cacao chips)
Instructions:
Preheat the oven to 350 degrees. If you try a higher temperature, you will risk evaporating the oil. In a large mixing bowl, add all of the above ingredients except for the cacao chips and the CBD oil. Stir until mixed well. Once mixed well, stir in the cacao chips. Next, in a greased muffin pan (I use a non-stick spray), add enough to fill the cups to the top. Using a toothpick, create a small impression in each muffin for one dose of CBD. If you plan on eating more than one muffin in one sitting,

then adjust the next step accordingly. Add the oil to each muffin. Use the toothpick to stir the oil into the muffin. When your oven is ready, bake your muffins for approximately 30 minutes or until cooked thoroughly. I have noticed that different humidities cause varying baking times.
When they are done, you may want to put them in a cooling rack to let them cool. We typically dump them out of the muffin pan onto a large cutting board. Right away, we eat them as they are still warm. These muffins are very good. You may be tempted to eat more than one. Please remember, you added one dose of CBD to each muffin unless you made a few without the CBD oil just for this purpose.
